Cheese Factory

If you ask Lanna International Year 3 students ‘Who cut the cheese?’ they will excitedly answer, “Miss Pim!” No, Miss Pim isn’t a student or a teacher at Lanna, she is one of the many employees at Dacheeso Cheese Factory in Chiang Mai who just happens to be the person in charge of cutting and packaging cheese. Year 3 students got a chance to meet these skilled employees when Mr. Joe took his class to see the inside of a working cheese factory.

Students started the day by drinking a nice cool glass of very fresh milk. They then followed the milk through the whole process from there. As they saw the milk being heated and stirred, they asked many challenging questions. Good thing owner, Khun Kalarb, was there to answer. Questions such as, ‘Why is cheese different colors?’ and ‘How do you make the holes?’ filled the spotless factory. The children listened intently as Khun Kalarb answered and explained the process.

It wasn’t long before the factory grew silent as the children got a chance to taste fresh cheese curds. Rebecca, a Year 3 student explains, “The cheese tastes even better than the cheese my daddy buys at Rimping.” This is no surprise as Dacheeso, who also owns and operates the popular Art Café at Thapae Gate, has supplied cheese and many other products to Rimping Supermarkets and restaurants in Northern Thailand for more than 17 years.

The education filled day came to a close at the Hideaway restaurant, which is also owned by Dacheeso, right across the street from the factory. What started as a glass of fresh milk ended with the children eating finished mozzarella cheese, on complimentary pizza!

Ending this ‘cheesy’ account of the fun-filled day, Mr. Joe and Year 3 Lanna students, would like to give a big thanks to owner Kularb Larbkam.
